how to edit menu text

[HADIJPM]

Hi  everyone,
I'm back with a new problem.
(I'm not exactly sure what to search for to find the option I'm looking for — sorry for opening a new topic again.)
My issue is that I can change the background just fine, but when I try to edit the texts, a black background appears over them and ruins the work — or sometimes the PES logo turns out like that too.
I actually fixed this before, but it was around six months ago and I've forgotten what I did.
I'm using Photoshop.
If there's an easier program to deal with this problem, I'd really appreciate it if you could recommend one.
And one more question:
Before, I managed to change the color of the loading boxes and stuff like that, but now I've forgotten which file is responsible for it.
Thanks for your help
